Minnie Mouse Cupcakes Recipe
When it comes to baking, or food in general, I'm not a man of big words, but rather a man of actions. Nevertheless, I would like to leave a few personal words about the Minnie Mouse cupcakes.
Like many others, most likely including you who are reading this right now, I grew up with Disney. It was an integral part of my childhood and still is today. I was not even 3 years old when my parents took me to Disneyland Paris.
Disneyland turned 25 this year and for me that's 24 years full of great memories. So these cupcakes are a little homage to this wonderful place and a little birthday greeting from me.
Preparation for the Minnie Mouse Cupcakes
Preheat oven to 180 degrees and bake for about 25 minutes . For 12 cupcakes
ingredients for the dough
125g | soft butter |
1 Pk | vanilla sugar |
150g | Sugar |
1/2 | butter vanilla |
2 | eggs |
200g | Flour |
2 1/2 level teaspoons | baking powder |
150ml | buttermilk |
4 slightly heaped tablespoons | cocoa |
100g | fresh raspberries |

250g | mascarpone |
1 packet | vanilla sugar |
3 tablespoons | Sugar |

mini Oreo cookies |
gift ribbon |

preparation of the dough
First, preheat the oven to 180 degrees , then you can start working.
Mix the soft butter with vanilla sugar , sugar , butter vanilla and eggs to a smooth mixture. To ensure that the muffins rise well, mix the flour with the baking powder. Gradually add the flour mixture and the buttermilk and beat to a fluffy dough. Finally, add the cocoa .
A little tip: It's better to put the dough into white molds , because the colored ones don't look so nice after baking. You'll use them later.
Fill the molds halfway with the dough, then press 2-3 raspberries into the middle and then cover with the remaining dough.
Put it in the oven and bake for about 25 minutes (don't forget to do the toothpick test!).
Preparation of the topping
The topping is relatively easy to make. The mascarpone just needs to be mixed with the vanilla sugar and the regular sugar and filled into a piping bag or decorating syringe . How you apply the topping is up to you. So that it looks nice :)
Attaching the decoration
Now it’s not far to the final result!
First, prepare the bows. You can either tie normal bows with the gift ribbon or place a piece of it on top of each other and tie it in the middle with a thread/wire . Then you fluff up the ribbon to make a nice bow.
Now the two Oreo cookies are pressed onto the topping with a little space between them. The bow is placed in front of the cookies and the entire cupcake is placed in the red muffin tin.
The Minnie Mouse cupcakes are ready!
Small alternatives
- If you don't like raspberries, you can of course use any fruit you like
- If you don't have eggs at home but have applesauce, you can use 1 tablespoon of applesauce per egg as a substitute
- Personally, I like to use buttermilk for baking because it refines the taste. But you can also use normal milk or vegan variants , such as oat milk.
- Mascarpone is not available in every shop, so whipped cream is a good alternative. Simply whip the cream with a packet of vanilla sugar until stiff
